Anybody that knows me, even barely, knows cooking is one of my great passions in life.  I love to cook for my husband, my children and myself, but for so many years I served traditional meals without even worrying if they are healthy or nutritious for our bodies, as long as they were satisfying. As I was nearing the end of my graduate school studies, I was overweight and struggled with some health problems that were caused by the excess weight.
